GRILLED TUNA WITH OLIVE AND PARSLEY RELISH

Olive Parsley Relish
1/2 cup chopped fresh parsley
1/3 cup chopped pitted black olives (kalamata)
1/4 cup chopped celery
1 clove garlic, minced
1/2 teaspoon oregano
1 tablespoon lemon juice
1 teaspoon extra-virgin olive oil
1/8 teaspoon salt
Freshly ground pepper, to taste

Grilled Tuna
4-6oz tuna steaks, trimmed
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper

Preparation
1. To prepare olive relish: Combine parsley, olives, celery, garlic, oregano, lemon juice, oil, salt and pepper in a small bowl.
2. To grill tuna: Preheat grill/skillet to medium-high. Rub tuna all over with oil and season with salt and pepper. Grill the tuna until seared on both sides and just cooked through, about 4 minutes per side. Don’t overcook or the meat will dry out.
3. Serve tuna steak and top with the olive relish. Enjoy!
