Pasta-  This is what I consider my culinary roots.  I grew up in Youngstown, Ohio and good pasta was a given.  My expectations of what constituted good pasta was really elevated after my first trip to Italy.  Since then, I  strive to recreate the unbelievable foods that I encountered there.  Once I perfected making homemade pasta, it was nothing less than an epiphany.  It’s not that it is all that difficult, but it was one of my major goals.  I have created some awesome pasta’s and ravioli’s, but it always seemed to be a bit of a struggle.  Now, I wonder why I struggled.  Hopefully these recipes along with my advice will allow you to skip the struggle and go directly to making pasta that you will be proud of.    Don’t be afraid to try homemade pasta.  It really is quick, easy and delicious.  Once you do this, you’ll never go back to store bought pasta.
