Yellow Tomato Carpaccio

Yellow Tomatoes
Whole Pecans
Capers
Fresh Spinach
Olive Oil
Champagne Vinegar
Salt and Pepper
Slice the tomatoes and arrange on the plate, then season them with salt and pepper. Top with capers, fresh spinach leaves and the whole pecans. Drizzle olive oil and champagne vinegar on top of the ingredients. Super fresh and delicious for the warm summer. Enjoy!
Seared Halibut With Apples
3/4 pound halibut
1 green apple
1 cucumber
1/4 cup chopped shallots
1/2 teaspoon chopped garlic
1/2 teaspoon finely chopped ginger
good pinch of salt and pepper
1/2 teaspoon Tabasco hot pepper sauce
1 1/2 teaspoons fresh lemon juice
2 1/2 tablespoons extra-virgin olive oil
Fresh chives
Lemon zest
Salt and pepper the halibut then heat up a skillet and add a little oil, cook the halibut and set aside. Slice the cucumber long way with a speed peeler and set a side then peel and dice the apple and put into a bowl. In the same bowl add the garlic, ginger, tabasco, lemon juice, olive oil, and shallots. Dice the halibut and add it to the bowl also. Re season with salt and pepper. Place a portion on a plate and take a slice or two of the cucumber and wrap the ingredients. Top with lemon zest and a sprig or two of chives.
