Quick Key Lime Pie
Crust
1 1/2 cup cinnamon graham cracker crumbs
5tbs of melted butter
1tbs sugar
Filling
1 (14-ounce) can sweetened condensed milk
1/2 cup key lime juice
4 large egg yolks
1tsp vanilla
So easy and good, takes me right back to Key West! Preheat oven to 350 degrees. Mix the melted butter, sugar and graham cracker crumbs together to form a wet sand like mixture. Place in a 9in pie pan and form around the pan to make the crust. Bake for 10min, then cool. For the filling mix the condensed milk, vanilla, and yolks in a bowl. Once combined mix in the lime juice. Then pour mixture into the pie crust. Bake at 350 degrees for 12-15min. Let cool then place in fridge for at least 3-4 hours before serving. Top with a little whipped cream and lime zest. If you want to get a little more complicated you can do a meringue topping.
Crème Caramel

Caramel:
1 cup sugar
2-3tbs water
Custard:
4 eggs and 2 yolk
1/2 cup sugar
2 cups whole milk
1 cup half and half
inside of 2 vanilla beans or 2 tsp liquid vanilla
Caramel: Put the cup of sugar in a saucepan and add just enough water to dissolve the sugar, and set the pot over high heat. After a few minutes the mixture will come to a boil, watch it will start to color. Swirl the pan around to even out the caramelization. It takes just seconds for caramel to go from great to burnt. Be careful! When the desired color is achieved poor the caramel into the bottom of a large ramekin. Put the ramekin in the fridge to cool and set the caramel.
Custard: Preheat oven to 350 degrees. In a saucepan steep the milk, half and half, sugar and the vanilla for 5min. Slowly whisk the milk into the eggs. Strain the mixture. Pour the mixture into the ramekin. Place the ramekin into a baking dish filled halfway up with water and place into the oven. Bake for one hour and check to make sure the middle of the custard trembles still a little. Take a knife and go around the mold. Flip the ramekin over onto a plate and let all the caramel drizzle all over the place! Enjoy!
English Trifle
Lady fingers
Amaretto liquor
Whipping cream
Powdered sugar
Berries (any you choose)
Lemon zest
Dark chocolate bar
In a large mixing bowl make the whipped cream with the powdered sugar. In a trifle dish add a layer of lady fingers and splash with the amaretto. Then a layer of whipped cream, then a layer of berries. Repeat until you get to the top of the dish. Grate the dark chocolate and the lemon zest on top for garnish. This is so simple and delicious and looks amazing. Take this to any party you are supposed to make a dessert for!
